You hear it all the time; restaurants getting criticized for not being able to deliver the same culinary experience to every customer. Well, UrbanWire is commending Frost Bites precisely for being inconsistent when it serves up ice shavings, frozen yoghurt and smoothies, cold salvation in Singapore’s hellishly hot climate.

Each batch of fruit heaped on the ice is served as is, so even if today’s strawberries are more tart than yesterday’s, the edge isn’t disguised with processing or added sugar. See why we’re actually happy about inconsistency now?

Frost Bite’s frozen yoghurt ($3.80) is the new kid on the menu, having been introduced in mid-October. The co-owner, Brian Yang, has been continuously tweaking the recipe for the yoghurt based on what his customers (mainly the office crowd around Tanjong Pagar) say about its sourness by changing the variety of yoghurt that he gets from his supplier. After he gets it, he customizes it by adding a secret ingredient.

What UrbanWire got to taste was light and surprisingly sweet, which Brian insists isn’t due to extra sweeteners. The yoghurt is not as creamy as the ones you find in bigger names like Frolick or Red Mango. Which also means it doesn’t leave that heavy coating on the tongue that dull your tastebuds, allowing you to enjoy spoonful after spoonful. It’s so smooth, without the graininess you feel with other brands like Yami Yogurt.

Another icy treat is the ice shavings ($3.80), a finer and airier take on the familiar ice kachang (a local dessert of ice shavings served with brightly colored syrup over cubed jelly and assorted sweets).

Made mainly of plain ice shavings, with added evaporated and condensed milk, and another secret ingredient (UrbanWire suspects it’s soy from the taste). The toppings are generous, mine had cubes of mango threatening to fall off at every turn. There are more choices of fruity garnishing, like kiwi, strawberry and honeydew.

The delicate texture of the ice, unlike the coarse ice kachang,means it’ll melt super quick as well. If you’re ordering takeaway, do let them know so they can adjust the texture of the ice to ensure you don’t end up with a cup of milk when you get home.

The 4 smoothies available ($3.90) are another guilt-free treat of fresh fruits blended with milk and that secret ingredient. Again, no sugar is added, although customers are warned if the fruit is overly sour that day to allow them a choice of adding sweetness with a dash of sugar. Despite not having much cream other than milk, the smoothies are velvety and frothy so you don’t feel like you’re drinking fruit juice.
